"I do a lot of experimental baking and had a batch of cookie dough ready. I baked the cookies on my new Heirloom sheet and on two other sheets, one was stainless, the other was a non stainless sheet with a clear non-stick finish and has gotten great reviews on the internet. The Heirloom sheet outperformed both of the others, especially the non-stick sheet which produced cookies that were overbrowned on the bottom.
