The Heirloom sheet outperformed both of the others, especially the non-stick sheet which produced cookies that were overbrowned on the bottom. The Heirloom sheet produced cookies that were the same degree of brown on the tops and bottoms. I did not use parchment and I did not grease the sheets–the cookies came right off and there was not much residue to clean up.
