Heirloom Cookie Sheets are produced in conformity with established Cookware Manufacturers Association (CMA) standards and we use only the highest quality Type 304 American Made Stainless Steel.


You will often see 18/8 or 18/10 describing the stainless.   What do those numbers mean?  Stainless steel is an alloy, which means it is made up of a number of different metals.  Two of these metals are chromium and nickel.  The first number, 18, refers to the percentage of chromium present and the second number refers to the percentage of nickel.


Chromium binds oxygen on the surface and protects the iron component of stainless from oxidation (rust) and Nickel enhances the corrosion resistance.

The presence of these two metals "seals" the steel from any harmful effects.


Our stainless steel is bought direct from American steel mills.  The exact composition of stainless alloys varies by batch, but will always be within the range of 18-20.5% chromium and 8-10% nickel.




Stainless steel gets its name because it is "Stain-less," another words, highly resistant to stains, rust, corrosion and scratching.


Stainless steel is Nonreactive and will not release any harmful chemicals or traces of metal into the things you bake.


Stainless steel is an "Inert" metal meaning it will not chemically react when in contact with other chemicals.


Stainless steel is made up of all Natural Elements, meaning it will not break down or leach components over time.
